The Sidamo coffee growing region is located in southeast Ethiopia. In this region, Sidamo green coffee grows at an altitude of 1500 to 2200 meters above sea level, which earned it the distinction of "Strictly High Grown" (SHG) and "Strictly Hard" (SH). The cooler climate of the highlands with temperatures between 15 and 20 degrees Celsius allows the coffee cherries to ripen slowly. This longer ripening period allows the cherries to absorb more nutrients and develop complex sugars. The combination of high altitude, nutrient-rich soil and even rainfall contributes significantly to the unmistakable taste profile of Sidamo green coffee.

Sidamo green coffee is known for its exceptional complexity, which is due to the region's various "landraces (heirloom)", which are native to the region and have been cultivated for generations. Varieties can vary from micro-region to micro-region and even from farm to farm, with each farmer having several unique coffee varieties that are rarely found outside of their farm. All of these different “landraces” have different properties and flavors.

The farmers then bring their garden coffee to the Bensa washing station, each contributing their own beans. The resulting blend produces a complex flavor profile - an interplay of flavors and sensations in the cup that reflects the diversity of plant genetics and growing methods. The complexity, richness and depth of flavor are just some of the factors that make our Sidamo green coffee so popular.
